Wu Yi Shui Xian (Water Sprite)
Traditional Wuyi Shui Xian (Water Sprite) is a classic rock oolong (yancha) from the Wuyi Mountains in Fujian, China. The dry leaves are large, tightly rolled, and heavily oxidized. Once brewed, the leaves reveal a deep dark green color. The infusion has a bright amber to dark copper hue and offers a rich flavor profile with smoky, woody, fruity, and floral notes that are beautifully balanced. Shui Xian is particularly popular in China and is often served in traditional teahouses and listed on the menus of Chinese restaurants. The tea is entirely hand-picked and crafted using traditional methods. After harvesting, the leaves undergo several slow roasting cycles, which create its intense, deep flavor. A remarkable characteristic of this tea is its ability to age well. Over the years, the roasted notes gradually mellow and transform into warmer, sweeter aromas. As a result, Traditional Wuyi Shui Xian is not only a special experience to enjoy now but also a tea that gains complexity and depth over time.

| Brewing western | Oolong tea: Use 2 grams of tea per cup (200ml) and brew medium to hot, around 80° to 100°C, allow to steep for 3-5 minutes and infuse at least 3 times. |
| Brewing eastern | Use 5 to 7 grams of tea per 100ml of water, the water temperature is between 90 and 100 ° C and short steeps of around 10 seconds. It's best to use a small teapot or gaiwan. |
| Cold Brew | Cold infusion, use 10 to 16 grams of tea per liter of cold water. Let the tea steep overnight in the fridge, 12 to 15 hours. You can vary with the proportions for example to add sparkling water afterwards. |
