Mao Jian Organic, originating from Yuanling, Hunan, China, is one of China's famous green teas and was harvested in early spring 2025. This tea is made from small, tightly rolled, dark green buds. The tea is light yellow/green in color. The tea liquor has a creamy, egg yolk-like aroma with a hint of vegetation. This tea tastes refreshing and has a sweet aftertaste. The name describes the tea's appearance: Mao means "small downy hairs in the tea," and Jian refers to the appearance of the leaves, which are young, long, pointed leaves.

| Brewing western | Green/Yellow tea: Use 2 grams of tea per cup (200ml) and brew cool, around 70°C, allow to steep for 2-3 minutes and infuse at least 3 times. |
| Brewing eastern | Use 5 to 7 grams of tea per 100ml of water, the water temperature is between 90 and 100 ° C and short steeps of around 10 seconds. It's best to use a small teapot or gaiwan. |
| Cold Brew | Cold infusion, use 10 to 16 grams of tea per liter of cold water. Let the tea steep overnight in the fridge, 12 to 15 hours. You can vary with the proportions for example to add sparkling water afterwards. |
