Takachiho Black a black tea from the hills of the town of Takachiho, in the north-west of Miyazaki, Kyushu Japan. This tea was picked in the spring of 2023. This tea is made from the Benifuki variety that has been specially developed for black tea. The tea grows at an altitude of 350 meters, the temperature differences between day and night are large, which slows down the growth of the plant and makes the flavors and scents more intense. The tea is very aromatic and smells exotic of peach, bergamot and white flowers (orchid), has a rich taste that lingers nicely when prepared at around 85 degrees. The dry leaf smells like cookies!

The Benifuki variety is a cross between a Sinensis (from Darjeeling) and Assamica tea plant. If you look at the wet leaf you see that the leaves are not completely oxidized, they have dark shades of green, dark red to brown, you can perhaps also describe the tea as a Japanese Oolong.

Brewing westernBlack/Red tea: Use 2 grams of tea per cup (200ml) and brew hot, around 90°C, allow to steep for 3-5 minutes and infuse at least 3 times.

Cold BrewCold infusion, use 10 to 16 grams of tea per liter of cold water. Let the tea steep overnight in the fridge, 12 to 15 hours. You can vary with the proportions for example to add sparkling water afterwards.
